I think it is fairly common for these stipulations:

-get it all in writing as far as amount of each payment and when it is due
-the horse stays at your house until paid in full
-you charge board until the horse is paid in full

If she wants a payment plan AND take the horse off your property she is fully 
responsible for all expenses.

Be sure YOU are comfortable with the arrangement.
