I think other posters have pretty well summed this up, but get a different instructor! The German methods where you dictate every little step the horse takes is suitable for Warmbloods--it is not suitable for Arabs, nor is it suitable for general riding. I don't mind the deep seat part--you need that. But dressage should be about establishing the most subtle, lightest communication possible.
