Experimentaion is the key. My normal menu is -coffee, yougurt and an open faced peanut butter sandwhich, for lunch it's a ham sandwhich (dry) potatoe chips and a fruit cup. Also being sure I take my usual vitamin and mineral supplements. I found drinking as much water as possible over the course of the ride makes a huge difference. I take bottled water as this allows me to be able to monitor what I am drinking and not guess. For a hundred or a 75, coffee on the later stops is a must. I have started drinking a product called "Accelerade"-it's a sports drink, it helps too. I also found that Vitamin E and Selinum supplements seemed to help with the muscle soreness (works for the horse, why not me?) Figuring out what to eat is part of the puzzle. Good luck!
