I think this is an fear and/or trust issue. The horse may not feel comfortable on the trail and she is so busy "watching out" for everything that she becomes wired and then over responds to your cues.  Maybe go back and start again slowly and wait until she builds up her confidence more before proceeding with faster work on the trail. 

Just a thought for what it's worth.
