I'm not mad on the idea of feeding bran, because of the
scouring effect. He is a horse with soft stools most of the time anyway,
and one time I did feed bran, they became really loose and a bit
runny.

Please, do not feed bran, especially
not free-choice. Contrary to traditional belief, it does not
increase water-holding capacity in the hindgut, does not provide appreciable
"bulk" to the ration, and the high phosphorus will cause far more problems
than it will solve.
If you're really concerned about him not
drinking, considering pulling some blood for a chem panel to check albumin
levels---that will tell you once and for all if he's drinking enough or not
enough to maintain adequate hydration.
