How about (for 100 milers), sung to the tune of "Rock around the
Clock":

We're gonna trot around the clock tonight
We're gonna trot, trot, trot, till the broad daylight

You can make up lots of verses on the fly, like:

We're trottin' down this single track,
Vet check's ahead, we don't look back
We're gonna trot around the clock tonight
We're gonna trot, trot, trot, till the broad daylight
We're gonna trot, gonna trot, all around the clock tonight!

Ahead I hear a rushing stream,
Sparkling in a bright moonbeam,
We're gonna trot around the clock tonight
We're gonna trot, trot, trot, till the broad daylight
We're gonna trot, gonna trot, all around the clock tonight!

Another song that's easy to make up verses for has a refrain of 

Hey la-li, la-li, la-li,
Hey la-li, la-li lo;
Hey la-li, la-li, la-li,
Hey la-li, la-li lo.

It was an old Weavers tune.  Verses can go like this:

We're ridin' down this rocky road,
Hey la-li, la-li lo;
It's got more rocks than bumps on a toad,
Hey la-li, la-li lo.

We're headin' for that finish line,
Hey la-li, la-li lo;
To win B.C. would be divine,
Hey la-li, la-li lo.

Or more personal:

See this handsome chestnut horse,
Hey la-li, la-li lo;
He's the best horse on this course,
Hey la-li, la-li lo.

See Truman in his hot pink tights,
Hey la-li, la-li lo;
No matter how dark he'll never need lights,
Hey la-li, la-li lo.

Or even more personal:

Mackay-Smith was once our Prez,
Hey la-li, la-li lo;
I never understand a single word he says,
Hey la-li, la-li lo.

If two or three riders take the challenge and make up verses the miles
fly by.
