You did not say how many rides your horse has done, but the problem with not
eating may disappear with experience.  I would not worry too much about it
as long as he keeps eating his hay.  I don't think you're likely to get him
to eat by adding flavorings, but it might be worth a try to pour on some
molasses or put some sugar in to entice him to eat.  Also, are you feeding
him out of his usual container?  I found my horse would not eat from the
nice, new black rubber feed pan I bought to use at rides.   The pan smelled
like rubber and I'm sure it affected the taste of his feed.   I brought
along his old, tired, beat up plastic pail that hangs on the fence for his
feedings at home and then he began to eat much better!
