An interesting thing to do is to watch the HRM at various gaits at various
speeds. Usually a gaited horse will transition from one of his six or
seven gaits to another on his own. Usually when that happens the heart
rate drops which lead one to conclude that he is transitioning to a gait
which requires less energy output.

So the horse will tell you what his most efficient gait is at a given
speed. That is unless the temp is 40 degrees and he has in his mind to
gallop his fool brains out because it is cold and he feels good. In which
case just hold on!
