What you want to do is time his responses. First he'll be energized, then
sleepy, then energized again--that's his glucose response curve. You compete
when you can expect peak performance--then, in longer distacnes, keep
resupplying the fuel.

If you really want to get into it, go down to the drug store and buy a
glucometer. Then measure the horse's blood glucose directly--it will go up and
come down after a feeding of whatever. Then exercise him while you're taking
the working curve. Lay it out on a chart and you'll know what to do in
competition.
