We call it the "snake face". I don't know that you can change this most
basic of horse behavior. But if you ride with a bit, you might consider
riding with real contact and not allowing him to turn his head to show
his "mean face". Yelling won't really influence him, but a good squeeze
with your legs and keeping him up in the bridle may help him focus on the
task at hand.
You can always choose to not ride alongside for any distance.
