That's because it makes the hair so slick that the tack slides arounf (or
off). Back when I was in college, I had a mare that I'd show in hand, then
ride in the western classes. You can imagine my surprise when I found that
my mom tried to help out and had sprayed show sheen everywhere! I could
barely get on, and I canceled my entry in the reining class. I could see
the saddle sliding over during a good spin or roll back!
Since you are actually trying to make the hair slick so that the saddle
doesn't rub in that ONE spot, you should be fine.
