Hi Dave,
how do you know you were not burning carbs? Did you bonk after 30 miles? If not, you were still using carbs for energy as well as fats and probably not in a very different proportion to what you had used earlier in the race. If you were burning all fats you would be essentially out of the race; fats alone cannot support racing at the pace needed during a century type ride.
