I've been riding with a camelback for about a yr now. You are correct, if
filled completely, they do raise your center of gravity, or at least alter
your sense of balance in the saddle that is a little unnerving, esp at the
start of the ride. I've found that filling it halfway avoids the balance
interference, & I can get thru a 50 mile ride --- ran out of gatorade in just
1 50 miler using it half full. I put some powdered gatorade in the camelback
to make a diluted solution which works fine for me.
I did find that the straps can rub on your neck/shoulder area, esp if you
don't have the camelback exactly centered on your back (I didn't have the
straps equal length so that the camelback was pulled to the left, which
rubbed my right neck). If you wore a collared shirt, you'd avoid the
rubbing, but I use the camelback when it's hot & I wear a collarless shirt!
I like not having to fumble with water bottles, which tend to bounce out &
get lost (usually lost at least 1 per ride). With the camelback, you can
drink when your thirsty & not have to wait for a slow stretch --- you can
drink at a canter as all you need is 1 hand for a quick second to get the
tube in your mouth.
