Would the best thing to do be to pull the horse once you feel its not
drinking enough or are there other methods?

There are tricks (recently posted on RC) about how to encourage your horse
to drink. There are also some things you can do nutritionally before,
during and after a ride to increase performance and avoid metabolic crashes
(all you guys in Oklahoma got to hear that lecture in January), but none of
them are going to help if the horse isn't drinking during a ride. If I
thought my horse wasn't drinking enough during a ride, I would absolutely
pull him.
Sympathies to your friend who lost the horse, that's a real shame.
