They are both challenging, but in different ways. The 2-day horse has better
opportunity to refuel, etc., but also has the problem of working out the kinks
from the day before. The latter can be a blessing, as if he is injured, you
are more apt to pick it up before you continue, whereas the problem may have
to get worse before he will "admit" it on the one-day version.
Certainly respect is due to those who do either variety.
