TX rides

Since I live in the middle of nowhere, endurance-wise, I'm pretty wide
open for rides.  Can anyone recommend any rides in south/east TX that I
should try (any time this year, not necessarily right away)?  That's about
the same distance as the GA and FL rides for me, I think.  I looked at the
calendar and saw a bunch of TX rides, but I have no idea where all those
places are. :)

We're used to mud and some sand, hard clay, some gravel okay, flat land
only.
