Hi Karen:

Contact AERC.  They have a very good phamphlet on putting on a ride, more
of a booklet with detailed info on many of the things you asked.  Stuff
like how mnay volunteers etc. depends on # of riders you expect but in
general, the more the better.  Good Luck.
