drinking & eating when horse is hot

Another newbie question: I've often been told (as late as yesterday, in
fact, when I came back from a long training ride) that you shouldn't let
the horse drink too much water right after exercise because he might get
sick. However, I get the impression from what I've been reading online,
that you let your horses drink as much as they want, whenever they want,
and obviously they are often pretty hot when they are drinking during a
ride. Is this an old wives' tale? Does it apply only to out-of-condition
horses that have been overworked/overheated? How much is "too much"?
Does it depend on whether the horse looks "good" (i.e. working at a
comfortable level) or "bad" (i.e. overworked, stressed, etc.) ?
