The suggestion already made to put the fruit in Sangria may actually be
closer to the mark. Just a theory, but if you cut the fruit into
bite-size chunks and drop it into a container of liquid (Sangria is
nice, but water will do in a pinch) it should survive nicely as long as
the container is full (no slosh.)

The trick of course is to *contain* the liquid while riding. A good
Tupperware style container with a screw-on wide-mouth lid would be just
the thing.
