    For molding cookies, I use an ice cream scoop, the kind with the thumb lever
    that activates a little ring that slides under the contents.  I'll bet it
    would work for your sticky horse cookies, too.  I prefer not to have my
    hands all sticky with cookie dough, and besides it's wasteful.  Another
    thing that helps is to spray the inside of the ice cream scoop with
    non-stick cooking spray (such as Pam).
