Good question!  I would like to hear more on fitting the round, flat backed
arab.
I have two horses that fit your description.  What I'm currently using is
the Wintec 500 Dressage saddle with the extra wide gullet (Wintec also
makes an extra-extra wide gullet for draft horses).  I hope this helps.
