The digital thermometers work via a thermocouple. When two different metals are
jointed together, a current will flow. It is well know the realtionship between
temp and the current for the most common pairs of metals used in thermocouples.
The digital thermometer simply measures the current and transforms it into a
temp reading. All that needs to get up to temp is the small metal tip on these
units, which happens fairly quickly, much faster than for the mercury/glass
thermometers. Most of them also beep when the temp has stabilized.
