My dad did that several years ago with an oldfashioned slick fork center-rigged western saddle, and had his very own custom "endurance saddle" as a result.  He had a saddlemaker do it, and the man neatly tacked a leather "rosette" over where the horn had been--looked fine, worked fine, and held up well.
