I replied privately to Karen, but feel the need to post on this subject (fat 
horse).  Having just had a horse diagnosed with Cushing's, these symptoms 
could be Cushing's:

Gaining weight when cutting back food
Cresty neck
Very sweaty

There are other symptoms as well (long shaggy coat that does or doesn't 
shed, excessive thirst and urination, seizures are some).  This can be 
diagnosed with a blood test and there are medications that are fairly 
effective at treating the symptoms.
