I like the concession idea, We had good luck with a 4H club at one of
our clinics.  We have so many potlucks that I would rather just make a
sandwich than try to think of something easy to transport.  I'm happy
whether we are fed or have to bring our own, and our ride managers here
have always been good about spelling out food in the ride flyers.
