It's probably more proper to say that it lyses protein
or breaks it up. Pineapple is also acidic which will
affect your end products with cooking.
It sounds like bromelaines produce an acid ash which
is a godsend for bladder infections as the acidity
will inhibit further growth of bacteria in the
bladder.
I am interested in how it reduces swelling. If
someone has experience with it, I hope you'll share.
